
In the most recent installment of MOLTISSIMO, Mario Batali whipped up two dishes that broke with tradition but were a perfect match for Ray Lewis and Rohan Marley, who played football together at the University of Miami back in the day.
First up was a tomatoless bruschetta made with pumpkin, mustard greens, and topped with nasturtium flowers. It’s a far cry from the tomatoes and onions starter at your neighbourhood Italian eatery, but it’s just as good and uses seasonal ingredients. Eat it with some fizzy Lambrusco.

Next on the MOLTISSIMO menu was a charred snapper with a tropical twist. Instead of tomato sauce, Batali makes a gazpacho pomodorini that keeps this fish dish light and refreshing. Once again breaking with tradition, Mario recommends pairing it with a light pinot noir.
And if you think this is dainty cooking, tell that to two-time Super Bowl champ Ray Lewis, who devoured both of these masterpieces.
